Kale & Butternut Squash Pizza

Who else loooooves pizza?! Eating healthy does not mean you have to sacrifice the things you love! It just requires thinking outside the box. I love creating my own pizzas with a variety of different vegetables! This pizza is made with a cauliflower pizza crust by Trader Joes. Filling, delicious, and incredibly cheesy, this definitely hit the spot tonight!

 

Recipe:


Total Cook Time: 25 minutes     |      Yield: 6 slices


Ingredients:    

  • Frozen Cauliflower Crust (Trader Joes)
  • Organic Pizza Sauce
  • 2 garlic cloves
  • 1/2 cup chopped kale
  • Daiya Mozzarella Cheese
  • Tomato slices
  • Radishes
  • Butternut Squash
  • Roasted Red Pepper
  • Red Pepper Flakes

Directions:

  1. Preheat oven to 450 degrees F.  Set frozen crust on a baking rack on top of a baking sheet. Cook for 10-12 minutes on one side, flip pizza and cook for an additional 10-12 minutes. For a crisper crust, bake for an additional 5 minutes on broil.
  2. While crust is baking, prep your tomato slices, kale, radish slices, and roasted red pepper. I had leftover butternut squash, but to prep butternut squash: peel and dice it and either bake it at 400 degrees for 20-25 minutes, or sauté it on medium-high heat with safflower or avocado oil until tender. Season with paprika, sea salt, pepper, turmeric, and garlic.
  3. Once the crust is done baking, top it with pizza sauce, minced garlic, chopped kale, daiya cheese, tomato slices, radishes, butternut squash, roasted red pepper, and red pepper flakes. Add additional cheese on top if desired. Enjoy!
